HAPPY ST. PATTY’S DAY!!!!! What a great day to enjoy some food and drink from the old country. Part of my Ancestry is Irish, and fairly close in the lineage, so I feel a particular pride in the Irish traditions. I have my cabbage and potatoes ready to go in the crock pot, and the corned beef is done. One of my favorites is Irish cream coffee…who doesn’t love Bailey’s Irish Cream? It’s so smooth and sweet, and it just makes my love for coffee explode!
Here’s a recipe for Irish Cream Coffee, that’s sure to make you feel Irish, on this blessed day of celebration. And, to also be grateful to St. Patrick, for banishing all the snakes from Ireland; Thanks’ be to St. Patty, for no snakes, green beer, and Bagpipes! Wishing you a fabulous day! Irish Cream Coffee
1 cup of freshly brewed coffee
1 ounce of Baileys Irish Cream
1/2 teaspoon of brown sugar
1/2 teaspoon of white sugar, (or sugar substitute)
Whipped cream (we used the canned version for this)
Brew your coffee, and pour into your favorite cup. Add the Baileys Irish Cream, brown sugar, and white sugar, and stir well. Top with whipped cream and chocolate sprinkles, or shavings.
